Broccoli with pesto

This Halloween, dress up your broccoli! Broccoli is a polarizing vegetable- you either love it, or hate it. I am the former. I could eat the stuff daily.But I also crave variety and spice in my food. To keep your broccoli (and other veggies interesting), try adding a wee bit of pesto and shredded Parmesan cheese. This combo would go great on sauteed spinach, Brussels sprouts or green beans.Ingredients:2 cups raw or frozen broccoli1 Tbsp. jarred/prepared pesto1 Tbsp. shredded Parmesan cheeseDirections:Steam broccoli in 1 Tbsp. water in the microwave for ~3 1/2 minutes.Drain water and add pesto and toss. Sprinkle with Parmesan cheese and serve.Makes 4 (1/2 cup) servings. Nutrition information per serving: 40 calories, 2.25 gm fat, 2.25 gm protein, 3.55 gm carbohydrate, 1.22 gm fiber, 1 mg cholesterol, 124 mg sodium
