Asian broccoli slaw with chickenIf you haven't tried broccoli slaw, it's time. This simple slaw is made of shredded broccoli stalks, carrots and red cabbage shreds, all of which are loaded with phytochemicals that fight disease as well as vitamin C, beta-carotene and folate. I've made sauteed slaw on it's own before, but this time combined with chicken and brown rice to make a complete meal. This recipe was demoed at Ohio National Financial this week and was a big hit. A big thanks to Trader Joes for sponsoring the food!Ingredients:1 lb chicken breast2 Tbsp. canola oil1 (12 oz) bag Trader Joes organic broccoli slaw1 Tbsp. minced garlic1 Tbsp. minced ginger1 ½ Tbsp. Trader Joes sesame seed oil2 Tbsp. rice vinegar or white vinegar¼ cup Trader Joes low sodium soy sauce2 Tbsp. chopped peanutsDash of red pepper flakesChopped cilantro3 cups Trader Joes cooked brown rice (in frozen section)Directions:1. Cut chicken breast into small pieces and set aside.2. In a large pan, add canola oil and chicken and cook until chicken is almost browned.3. Add garlic, ginger and broccoli slaw and continue saute’ over low heat.4. Mix the rice vinegar, sesame seed oil and soy sauce and add to the vegetables. Add in 3 cups cooked rice.5. Stir the mixture on low heat until vegetables are slightly soft.6. Sprinkle cilantro, chopped nuts and pepper flakes before serving.Makes 8 servings.
