Simple Yogurt ParfaitThere’s a reason Greek yogurt is so popular these days. Greek yogurt is higher in protein and naturally lower in sugar than its traditional yogurt counterpart. The benefit of protein? It maintains muscle mass, aids in blood sugar regulation and keeps you feeling fuller longer. And like all dairy products, Greek yogurt a great source of calcium.While most of us (myself included) are used to the sweetened stuff, I was surprised that I now prefer the tartness of plain Greek yogurt with a touch of honey and fresh or frozen fruit added. Plain Greek yogurt is very versatile and can be used as a substitute for sour cream in recipes, too.While yogurt contains no fiber (since it’s not plant-based), adding just ¾ cups of raspberries boosts the fiber to 9 grams per serving (that’s 36% of the daily value for fiber for crying out loud)! Blueberries, raspberries, frozen mangoes or other fruit can be used as well. Add a Tbsp. of ground flaxseed or chopped almonds for a dose of healthy fat.Ingredients1 cup plain Greek yogurt (fat free, unsweetened)¾ cup raspberries, blueberries or mixed berries (fresh or frozen)- allow frozen to thaw1 tsp. honeyDirections1. Place ¼ cup Greek yogurt in a clear glass sundae dish.2. Layer ¼ cup fresh or frozen berries over the yogurt3. Drizzle a small amount of honey over the berries and repeat the process of layering yogurt and berries and honey.Makes 1 yogurt parfait.
