Cherry cordial cookies
I am not ashamed to admit I like cookies. In fact, I love cookies- especially home made, chocolate chip cookies. Who doesn't? It's one of those comfort foods from my childhood that will always be special to me. And when your kids' school gets called off for 'snow' and you're trapped in the house, by God- it's time to bake.Where I may differ from other bakers is that I try to make cookies a slight bit more nutritious (but still delicious). I typically cut the recipe in half so I'm not eating cookies for weeks (though you can always share the batch with friends, family or neighbors). I reduce the butter and sugar by 25% and use a tad bit of whole wheat flour. These are by no means health food, but I'm all about moderation. One homemade cookie will not destroy your waistline and is certainly better for your soul than a handful of processed cookies. I came up with this recipe while fishing around in my pantry for chocolate chips. I think the combination of dried cherries, chocolate and almonds is delightful and I hope you will, too!Ingredients:6 Tbsp. unsalted butter1 egg1/3 cup brown sugar1/3 cup white sugar1/2 tsp. baking soda1/2 tsp. salt3/4 cup all purpose flour1/2 cup whole wheat flour1 tsp. almond extract2/3 cup semi-sweet chocolate chips1/2 cup dried cherries or cranberries1/2 cup chopped almondsDirections:Preheat your oven to 375 degrees1. Soften the butter and add to a large mixing bowl.2. Add the brown and white sugar and beat until blended.3. Add the egg and beat until mixture is smooth.4. Add salt, baking soda, almond extract and flour. Blend together until smooth.5. Stir in the chocolate chips, cherries and almonds.6. With a teaspoon, drop the cookie batter onto the cookie sheet and form into 1" balls.7. Bake for ~9 minutes until golden brown.Makes ~20 cookies.
