Spinach Tofu Dip

If you’re not a big fan of tofu, this recipe may change your mind. Tofu is a versatile, plant-based protein source containing all 9 essential amino acids. It is 100% vegan and can be made into a dip (or a smoothie) by adding various fruits or vegetables. Soft tofu is best for dips and smoothies whereas firm tofu is great for marinating and grilling or sauteeing.A great way to get more vegetables in your diet is to make a spinach dip (and serve it with vegetables)! The dip gets it savory taste from nutritional yeast, which is packed with B vitamins. Onions, garlic and lemon juice add a nice kick to the dip, too.Ingredients:½ box firm tofu½ box frozen spinach (thawed and drained of water)¼ yellow onion, chopped1 clove garlic½ tsp. salt1 Tbsp. olive oil2 Tbsp. lemon juiceDirections:Add tofu and spinach to the bowl of a food processor or blender. Add all additional ingredients and blend until smooth.Makes 8 (2 oz servings).
