Savannah Smile Parfait

It's likely no surprise that 95% of Registered Dietitians are women. And with that, many of us have families. And with families, you'll have boys or girls. I have 2 lovely girls, and both are in Girl Scouts. I have a love/hate relationship with scouts. I love camping, field trips and hanging out with other scout moms. I love that the girls earn badges for doing good deeds and "being a sister to other girl scouts". But, I have never been a fan of cookie sales. And I mean, I kind of loathe it each year. For one, the girls only make a fraction of the cost of the cookies. Secondly, cookies are sold in winter, which means going door to door in frigid temperatures to peddle them. And finally- and most obvious to foodies like me- they are highly processed cookies!Still, I gotta support the troops, and therefore am expected to buy at least 2 boxes each season. Normally, I opt for thin mints, cause let's face it, they are still delicious despite their lack of nutritional stamina. But this time around, I went for the "most nutritious" (or lesser of evils) and bought Savannah Smiles. These are powder sugar dusted moon shaped cookies that remind me of Mexican wedding cakes, only firmer, lower fat and lemon-flavored.One day while making one of my favorite snack of yogurt & berries, I crumbled a few lemon Savannah smiles on top. To my surprise, they were delightful this way! And if you need to feel a little less guilty about eating cookies, this is the recipe for you.Ingredients:1/2 cup plain non-fat Greek yogurt1/2 cup frozen blueberries2 crumbled Savannah smilesDirections:Place yogurt in a coffee cup and add in berries. Add crumbled cookies on top and voila- dessert!Makes 1 guilt-free serving. Nutrition facts per serving: 167 calories, 1 gm fat, 5 mg cholesterol, 26 gm carbohydrate, 3 gm fiber, 12.5 gm protein, 82 mg sodium
