Oven baked fries

I know there’s a lot of low carb, potato haters out there, but I’m not one of them! Potatoes are a good source of potassium and vitamin C, and not too shabby on fiber. Like any American gal, I like a good grilled burger now and then (lean grass fed beef, of course), and nothing goes better with it than some decent fries.You can cut the potatoes however you like (wedge, diced, thin sticks). My favorite has become “home fry” style where I cut them into 1 inch cubes and marinate them a bit before baking. Sweet potatoes are delicious, too, though I can’t seem to get the crunchy texture like white potatoes. Keep the skins on for added fiber, just clean them well. Try Yukon Gold, Russet or red potatoes. You won’t be disappointed!Ingredients4 medium Russet or red potatoes, cleaned and cut into 1 inch cubes or wedges1 ½ Tbsp. canola oil½ tsp. season salt1 clove garlic, minced or ½ tsp. jarred garlic (AKA ‘jarlic’)Non-stick cooking sprayDirections:Prepare potatoes above and place in a large zip lock bag. Mix the oil, salt and garlic together, then add to the potatoes. Close the bag and shake it so potatoes are covered in oil & salt.Spray a large baking sheet with non-stick spray. Spread the marinated potatoes evenly on the pan.Bake at 400 degrees for ~15 minutes, then stir/flip the potatoes and bake for another 15-20 minutes.Makes 4 servings.
