Fresh Tomato Sauce with Whole Wheat Pasta
Take advantage of that farm fresh produce this month. It won't last forever! In honor of whole grains month, try this fresh tomato sauce over whole wheat pasta.Why eat whole wheat? Whole wheat pasta offers 6 grams of dietary fiber VS the wimpy 2 grams you'd get in white/refined pasta. Fiber digests slower, making you feel fuller longer and helping with blood sugar control (read- smaller waistline over time). If you don't want to throw out the white stuff, just blend it with whole wheat pasta. A few brands to try include Barilla 100% whole wheat or multi-grain, Kroger 100% whole wheat or Ronzoni Healthy Harvest. Chow!Ingredients6 tomatoes, chopped2 Tbsp olive oil1 onion, chopped2 cloves garlic, minced1/8 cup white wine½ tsp. dried basil½ tsp. oreganosalt/pepper to taste½ box 100% whole wheat or multi-grain pastaShredded Romano, Asiago or Parmesan cheese (optional)DirectionsIn a large sauce pan, heat olive oil over medium heat. Add all ingredients (except pasta) and simmer for 30 minutes until vegetables are soft. Salt/pepper to taste.Cook pasta according to directions.
