Chicken in a pita with tzatziki sauce
Here's one more dish made using chicken in a crock pot (but roasted or grilled chicken works well, too). This deliciously different chicken dish is made with fresh vegetables and a tangy yogurt sauce. It’s low in fat and an excellent source of protein, fiber and calcium. To reduce the sodium content, use half the feta cheese and olives in the recipe. Hummus or grilled tofu would work as a substitute for chicken if you're vegetarian. Opah!Ingredients:2 cups cooked chicken cut into chunks4 (6 inch) whole wheat pitas, cut in half2 cups fresh spinach leaves or Romaine lettuce1/4 cup crumbled feta cheese½ cup kalamata olives pitted/slicedIngredients for tzatziki sauce:1 cup plain Greek yogurt1/2 chopped cucumber1 tsp. dried oregano1 Tbsp. lemon juice1 tsp. minced garlic1/2 tsp. cuminDirections for sauce:Place yogurt, lemon juice, garlic, cumin and oregano in a small bowl and mix well. Add chopped cucumbers and blend together.Directions for pita:Place cooked chicken in a pita half. Add ¼ cup spinach, 1 tsp. feta cheese and 1 tsp. chopped olives. Add 1-2 Tbsp. tzatziki sauce to the pita and serve.Makes 4 pita sandwiches (2 halves each).
