Spicy Turkey Tenderloin

Is the chill in the air limiting your grilling time? Here's a quick & simply stove top recipe that provides all the flavor of grilling while you stay nice and warm indoors. This is also a great cook once, eat twice recipe. Serve Spicy Turkey Tenderloin with roasted sweet potatoes for Sunday dinner then shred the leftovers for Sloppy Joes or fajitas later in the week. Ingredients1/2 cup orange or pineapple juice1/4 cup lime juice1/3 cup packed light brown sugar1 tablespoon molasses1/4-1/2 teaspoon cayenne pepper1 teaspoon ground cumin1/2-1 jalapeno, seeded & minced1 pound of turkey* tenderloins  Cooking sprayDirections1. In a small bowl, stir together juices, brown sugar, molasses, spices and jalapeno.2. Spray large, non-stick skillet with cooking spray.  Heat skillet over medium-high heat.  Cook tenderloins for 6-8 minutes turning frequently to brown on all sides and avoid burning.  Reduce heat to medium.3. Add juice mixture and continue turning tenderloins frequently until liquid thickens (9-11 minutes) and meat thermometer registers 140° F. Watch closely to avoid burning.4. Place tenderloins on cutting board, cover with aluminum foil and let rest for 10-15 minutes.  Slice turkey tenderloin into 1/2" slices, top with glaze left in the skillet.  If making extra, store leftovers in the refrigerator or freezer for another quick meal later in the week. Makes 4 - 6 servings*Pork tenderloin can be substituted for turkey tenderloinNutrition Information per 4 oz serving:  190 calories, 28 grams protein, 18 grams carbohydrate, 1.5 grams fat (0 gram saturated fat), 45 mg cholesterol, 70 mg sodium
