Simple chicken
It's February, it's cold and you don't feel like cooking dinner. One of the best things you can use this time of year is a slow cooker (AKA "crock pot"). The beauty of the crock pot is once you load it in the morning, dinner is done by the time you return from your busy schedule (working, running kids around- you get the picture).I give credit to www.allrecipes.com for this super simple dish. You can use the whole chicken (which is less expensive than buying pre-prepared chicken parts), or use legs, thighs and breasts in your crock pot.Ingredients:1 fresh whole Amish chicken (~4 lbs)- remove giblets1 Tbsp. paprika1 tsp. oregano1 tsp. garlic powder1 tsp. seasoned saltDirectionsMix the dry ingredients in a bowlMassage the chicken with the dry ingredients, including inside of cavity.Place chicken top side up in crock pot.Turn on low and let cook for 5-6 hours.Remove skin and bones prior to eating! Serve with roasted potatoes, brown rice, quinoa or other grain.Makes 8 servings.
