Ginger Mashed Sweet Potatoes

Thanksgiving is fast approaching! Rather than endure that calorie-laden, marshmallow infested sweet potato casserole (that's really more like a dessert than a side dish), why not try something quick and healthy? This mashed sweet potato recipe has just 4 ingredients, but you can add chopped pecans or walnuts if you like. It's extremely high in beta-carotene and potassium and contains zero fat, unless you add some nuts. Bon appetit!Ingredients:4 large sweet potatoes, peeled and cubed3/4 cup orange juice1 tsp. minced ginger1/4 tsp. cinnamonPreparation:1. Boil the potatoes until soft.2. Drain the water.3. Add orange juice, ginger and cinnamon4. Beat with a hand mixer on high until completely mashed.5.
