Marinated Salmon with Mango Kiwi Relish (from Cooking Light)

Real men eat salmon! This simple and delicious recipe is great for a weekend dinner party or to enjoy with your family.  Other seasonal fruits such as melon, peaches or berries can be substituted in the relish.Ingredients:4 (6 oz) salmon fillets1 Tbsp. honey1 tsp. olive oil¼ tsp. black pepperCooking sprayRelish1/2 cup diced, peeled mango½ cup cubed, peeled kiwifruit¼ cup chopped fresh cilantro¼ cup fresh orange juiceDirectionsFor salmon: Combine first 4 ingredients in a large zip-lock bag.  Add fish to the bag and seal.  Marinate for 10 minutes and turn occasionally.Heat the grill while fish marinates. Remove the fish from the bag and discard the marinade.  Grill the fish for 5 minutes on each side or until the fish flakes easily with a fork.While the fish is cooking, combine the mango and other ingredients.  Serve the relish over the fish.Makes 4 servings (1 salmon filet and ¼ cup relish) Nutrition information per serving: 321 calories, 13.8 gm fat, 3.2 gm saturated fat, 0 gm trans fat, 37 gm protein, 87 mg cholesterol, 11 gm carbohydrate, 1.3 gm fiber, 128 mg sodium.
