Love your leftovers!

June is grilling season!  If you're like me- you're busy and don't always have a ton of time to think up new recipes.  One habit I've gotten into is to make extra meat or grains (brown rice, pasta, etc) to have for leftovers on those nights we're too busy to cook.But why eat the same meal twice?  Below are some new ways to enjoy your leftovers:1.  Chop chicken into pieces and place into a corn tortilla.  Add salsa, chopped cilantro and low fat shredded cheese.  Voila- chicken tacos!2.  Slice grilled chicken and place in a whole wheat pita pocket.  Mix 2 Tbsp. low fat plain Greek yogurt with 1/4 tsp. cumin and oregano.  Add chopped tomatoes & cucumbers to the yogurt mixture and place over the chicken in the pita.3.  Chop grilled chicken into pieces and set aside.  Mix 2 tsp. light soy sauce, 1 tsp. sesame oil, 1 clove garlic and 1 tsp. ginger paste together with a whisk.  Add the chicken.  Sautee a bag of stir-fried vegetables and add the chicken pieces.  Serve over brown rice.4.  Take a whole wheat wrap and spread a tsp. of prepared pesto over it.  Layer fresh spinach leaves, tomato slices, shredded chicken and 1 tsp. Parmesan cheese over it.  Roll it up  and broil for about 3-5 minutes until cheese is melted.5.  Shred grilled chicken and add your favorite BBQ sauce.  Serve on a "skinny" whole wheat or multi grain bun with a side salad.
