Grilled Spicy Orange & Cilantro Sweet Potatoes

Are you having a party and want to wow your guests with something deliciously, different AND healthy? Then try these grilled sweet potatoes!  The orange marmalade and cilantro mix perfectly with the spicy red pepper and would go well with a beef or pork dish.  They'd also go well with mild fish like tilapia.Ingredients:4 sweet potatoes3 tablespoons olive oil2 tablespoons orange juice2 tablespoons orange marmalade2 tablespoons chopped fresh cilantro2 teaspoon red pepper flakesDirections

  1. Blend the last 5 ingredients together and set aside.
  2. Clean, peel and cube the sweet potatoes.
  3. Toss the sweet potatoes in the marinade.
  4. Place the potatoes in a vegetable grill pan and grill for 20-30 minutes until soft.  Toss the potatoes while grilling for even cooking.

Makes 8 (1/2 cup) servings.  Nutrition information per serving:  147 calories, 1.2 grams protein, 25 grams carbohydrate, 5 grams fat (.7 grams saturated fat), 1.2 grams protein, 0 mg cholesterol, 3 grams fiber, 10 mg sodium.
