Green eggs, no pan
Need something quick and healthy for breakfast, but don't want to get the kitchen messy? Here's the fastest egg in the Midwest! I call this "green eggs, no pan". With only a handful of ingredients, how can you go wrong? Here's what you'll need:1 egg and 1 tsp. water1 cup fresh spinachNon-stick cooking spray1 glass, Pyrex or ceramic bowl1 Tbsp. Shredded Mozzarella or 2% milk cheddar cheese1 whole wheat English muffin or sandwich thin- toastedDirectionsSpray the bowl with non-stick cooking spray. Crack the egg and scramble it with 1 tsp. water. Place fresh spinach on top of the egg. Microwave for one minute (that's right- 60 seconds) then remove from the microwave. Sprinkle eggs with cheese and fold over. Place the egg on the English muffin or bun. Voila- you've got breakfast!
