Greek Chicken Pitas with Tzatziki Herb Yogurt Sauce

Grilled too much chicken and don't know what to do? Try this deliciously different dish made with lots of fresh vegetables and a tangy yogurt sauce. It's low in fat and an excellent source of protein, fiber and calcium. Opah!Ingredients for sauce:2 cups fat-free plain yogurt1 cup peeled/chopped/seeded cucumber2 Tbsp. chopped fresh dill or 1 Tbsp. dried1 Tbsp. lemon juice1 Tbsp. white wine vinegar2 tsp. minced garlic1/4 tsp. salt (optional)Ingredients for wrap:1 (6 oz) skinless chicken breast1 Tbsp. light Italian dressing4 (6 inch) whole wheat pitas, cut in half2 cups chopped romaine lettuce1 medium tomato chopped1/2 cup sliced red onion1/4 cup crumbled feta cheese4 kalamata or black olives, pitted/slicedInstructions for sauce:In a medium bowl, combine all ingredients until blended. Cover & refrigerate before serving.Instructions for pitas:Place chicken in plastic bag with Italian dressing and marinate for at least 15 minutes. Pound chicken until flat, then grill until done or cook with non-stick cooking spray in a large skillet until brown (~5 min/side). Slice chicken on a cutting board and set aside.Mix the yogurt sauce with the lettuce, tomatoes and onions.Stuff a pita with a few ounces chicken and the yogurt/vegetable mixture. Sprinkle 1 tsp. feta cheese and a few pitted olives and serve.
