Give veggies with no color a chance!

But you may be surprised that foods without much color still are very nutritious.Take cauliflower- broccoli's white cousin. It's milder in taste than broccoli, but still boasts fiber, vitamins C and K and a compound called glucosinates, which may lower inflammation and boost immunity and protect against cancer.Onions of all varieties are great to season lots of dishes and add vitamin C and quercetin (a phytochemical also found in apples) that may reduce cholesterol, blood pressure and help protect against cancer.White potatoes, which are always blasted for their starch content are actually a great source of vitamins B6 and C, potassium as well as fiber. Cook them then serve them cold in salads for their resistant starch quality, which may aid in blood sugar control.Garlic may be stinky, but it sure is worth eating. Garlic contains powerful anti-oxidants including allicin, quercetin and organosulfur compounds that may aid in reducing inflammation, cholesterol and cholesterol in some studies.Finally, you never read about corn, let alone white corn. White corn is a great source of thiamine, folate and B6 and may reduce your risk for heart disease through its anti-inflammatory properties.
