Balsamic Glazed Pork Tenderloin
What better way to bring in the New Year than with this simple, delicious recipe that you can cook ahead of time? Add sliced onions, green beans, broccoli and pepper strips to the pot and serve over brown rice to make the meal complete!INGREDIENTS:Pork:2 pound boneless pork loin roast, trimmed of fat1 tsp ground sage1/2 tsp salt1/2 tsp pepper1 clove garlic, finely minced or crushed1/2 cup waterGlaze:1/2 cup brown sugar1 tablespoon cornstarch1/4 cup balsamic vinegar1/2 cup water2 Tbsp. low sodium soy sauceDIRECTIONS:In a small bowl, combine the sage, salt, pepper and garlic. Rub the spices all over the roast. Place the pork roast in a crock pot and pour in the 1/2 cup water. Cover and cook on low for 6-8 hours.Combine the ingredients for the glaze in a small saucepan at the end of the cooking time and bring the mixture to a boil. Reduce and let the mixture simmer, stirring occasionally, until it thickens.Remove pork from the crock pot, shred and place on a platter or plate. Drizzle the glaze over the pork and serve.Makes 6-8 servings.
