September brings the return of school as well as fruit and vegetable awareness month. What better time to pack something deliciously different for you (or your child's) lunch! Hummus is a versatile dip that's not only good for parties, but can be also used in sandwiches like the one below. If you're not a fan of spinach, add Romaine lettuce, chopped tomatoes or cucumbers to your wrap. Pair this colorful, high fiber sandwich with a side of fresh fruit and yogurt for a power lunch.Ingredients1/3 cup prepared hummus½ cup fresh spinach leaves1 (jarred) roasted red pepper 1 10 whole wheat tortilla or wrap2 scallions chopped½ cup chopped cucumbersDirections
- Lay the tortilla on a clean flat surface.
- Spread the hummus evenly across the tortilla
- Place spinach leaves to cover the hummus
- Place the roasted red pepper in the middle of the bed of spinach
- Toss the scallions and chopped cucumbers over the red pepper and spinach leaves.
- Roll up the tortilla and enjoy!
