Hummus & Red Pepper Wrap

September brings the return of school as well as fruit and vegetable awareness month.  What better time to pack something deliciously different for you (or your child's) lunch!  Hummus is a versatile dip that's not only good for parties, but can be also used in sandwiches like the one below.  If you're not a fan of spinach, add Romaine lettuce, chopped tomatoes or cucumbers to your wrap.  Pair this colorful, high fiber sandwich with a side of fresh fruit and yogurt for a power lunch.Ingredients1/3 cup prepared hummus½ cup fresh spinach leaves1 (jarred) roasted red pepper 1 10 whole wheat tortilla or wrap2 scallions chopped½ cup chopped cucumbersDirections

  1. Lay the tortilla on a clean flat surface.
  2. Spread the hummus evenly across the tortilla
  3. Place spinach leaves to cover the hummus
  4. Place the roasted red pepper in the middle of the bed of spinach
  5. Toss the scallions and chopped cucumbers over the red pepper and spinach leaves.
  6. Roll up the tortilla and enjoy!
