Swiss Chard & Lentil Soup

Soup's on! Swiss chard & lentil. Swiss chard is a power food that helps prevent lung cancer! It's loaded with lutein, fiber and protein to boot. Enjoy! Ingredients:1 lb Swiss chard- remove stems, clean & chop1/2 cup water1 cup brown lentils2 cloves garlic, minced1/4 onion, chopped3 cups chicken stock2 slices turkey bacon1/4 cup olive oilShredded Parmesan cheese (optional)Directions:Cook Swiss chard in 1/2 cup water.Add lentils and chicken broth and simmer over medium heat.In a separate pan, cook bacon. Cool, then crumble and add to lentils.Sautee the onion & garlic in oilve oil until browned.Add onions & garlic to lentils & chard.Cook over medium heat until lentils are soft.Serve with Parmesan cheese.Enjoy with some crusty French or sourdough bread Nutrition Facts Per Serving: Makes 6 (1 cup) servings.
