Sweet Potato Pear Salad

In place of those wickedly sweet candied yams that are served every year, try something new this holiday season. This delicious salad combines fresh (not canned) sweet potatoes and fresh pears in a sweet dressing made from honey and ground ginger. Celery, pecans and raisins add a great crunch and color. Put the marshmallows away and save them for hot chocolate another time! You won't be sorry. Ingredients:2 lbs sweet potatoes, peeled & cubed3 fresh pears2 Tbsp. lemon juice1/4 cup toasted pecans1 cup chopped celery1/3 cup raisins1/3 cup light mayonnaise1 Tbsp. honey1/2 tsp. ground gingerSalt to tastePreparation:

  1. In a saucepan, cook the yams for 8 to 10 minutes in boiling water just until tender. Do not overcook. Drain; set aside to cool.
  2. Core the pears and cut into chunks. Toss the pears with the lemon juice and mix with the cooled yams in a large bowl.
  3. Add the pecans, celery and raisins, mixing gently.
  4. In a small bowl, mix together the mayonnaise, honey, ginger and salt. Pour the dressing over the yam-pear mixture, mixing gently to coat the salad.
  5. Serve immediately or refrigerate.
