So you’ve cooked another turkey for Christmas? If you’re burned out on the usual turkey soup, turkey tacos and other typical turkey concoctions post holiday, here are a few more interesting dishes to gobble gobble: 1. Thai turkey noodles. You’ll need½ cup chicken broth1-2 tsp. chili sauce1 ½ cups chopped turkey3 Tbsp peanut butterchopped green onionschopped peanuts3 Tbsp. soy sauce2 garlic cloves minced1 ½ Tbsp. honey chopped cilantro1 Tbsp. minced ginger8 oz. Udon or linguine noodlesDirectionsCook noodles as directed & set aside. Combine chicken broth, peanut butter, garlic, ginger, honey and chili sauce in a pan and cook over low/medium heat. Whisk ingredients together until smooth, then remove from heat. Toss cooked noodles & turkey in peanut sauce and garnish with chopped green onions, cilantrol and peanuts. Makes 4 servings2. Greek turkey wrap. You’ll need1 cup turkey strips1 tsp. cumin½ tsp. salt2 whole wheat pitas½ cucumber, chopped½ cup plain low fat or Greek yogurt1 tomato, choppedDirectionsCut the pitas in half and set aside. Combine yogurt with cumin, salt, cucumbers and chopped tomatoes. Place ¼ of turkey in each pita pocket and add ¼ cup of yogurt/vegetable mixture. Makes 4 servings3. Sweet turkey salad. You’ll need:4 cups leftover turkey½ cup chopped pecans or walnuts2 Granny Smith apples, cut into small pieces½ cup chopped dried cherries½ cup low fat mayonnaise½ tsp. salt½ lemon, juicedDirectionsCombine all ingredients in a large bowl and chill for at least 2 hours before serving. Serve over spinach salad or in a whole wheat pita pocket. Makes 10 (1/2 cup) servings
