Peach Salsa

Peach season is almost over! Don’t just eat them as is, consider this yummy party dish for your next BBQ. Peaches are a great source of vitamin C, potassium and beta-carotene. Oh- and by the way, they’re delicious this time of year. To increase the quantity (and nutritional quality) of this salsa or alter the texture, add some chopped fresh tomato. Serve with your favorite chip or add to fish tacos, grilled chicken or fish. Delightful!Ingredients4 peaches, peeled, pitted and diced¼ red onion, finely chopped½ red or yellow bell pepper (or 2 baby peppers)1 Tbsp. chopped fresh cilantro¼ tsp. saltJuice of 1 lime1 tsp. white sugar DirectionsMix peaches, onion, and cilantro together in a large bowl; drizzle with lime juice. Sprinkle salsa with sugar; toss to coat. Refrigerate for 30 minutes before serving. Makes 6 servings.
