Mediterranean Layer DipI pitched this holiday dip demo to Fox 19 and presented it earlier today. I asked the anchors not to eat too much because I wanted to bring it to a cookie exchange party later to share. It was a hit at both venues! A good source of protein and fiber, hummus is very versatile and vegetarian-friendly. Chopped tomatoes and cucumbers provide a nice dose of vitamin C while red onions add color. Feta cheese and Kalamata olives boost the Mediterranean equity. Serve with pita chips, baguettes, whole grain crackers or vegetables. If you're got any dip left, serve it over salad or spread it in a whole wheat tortilla with fresh spinach leaves for a healthy wrap. You’ll be invited back to the party with this simple recipe.Ingredients:2 (10 oz) tubs of prepared hummus (original or garlic flavor)15 cherry tomatoes, cut in half15 Kalamata olives, pitted and chopped½ cucumber, cut into small chunks¼ cup feta cheese¼ red onion, chopped2 tsp. olive oil1 ½ tsp. oreganoDirections:1. In a 9” pie plate, spread both tubs of hummus on the bottom of the plate.2. Layer tomatoes, cucumbers, olives and onion on top of the hummus.3. Sprinkle feta cheese on top of the vegetables and olives.4. Drizzle olive oil over the vegetables. Sprinkle oregano after the oil and serve.Makes 12 servings.
