Camo snack mix
If I haven't mentioned it before, I love my neighborhood. Pleasant Ridge has lots of diversity, a strong art and cultural scene and a real sense of community. People look out for each other and new small businesses, including restaurants and pubs, are sprouting up.This past weekend, I had the opportunity to take part in a "Pop Market" during our annual Ridge Day celebration (complete with parade)! We have them quarterly in our neighborhood where local artisans and other businesses have booths to sell goods or market their business. My neighbors loaned me their tent and a table and I was good to go for my Ask Nutrigirl booth. I had a Halloween theme and gave away a grocery tour.This past weekend was likely the last (fingers crossed) of hot, humid weather. I love to have food samples when I have a booth, so I came up with a simple snack mix for kids that didn't need refrigeration. I initially had planned on dried cranberries in the mix, but opted for dates as they are naturally sweet without sugar added to them. Dates are a good source of potassium as well as fiber. Because of the risk for food allergy, I used pepitas (green pumpkin seeds) instead of nuts. Plain Cheerios and mini chocolate chips rounded out the mix. I dubbed it "camo snack mix" given the color. The kids (and adults) really enjoyed it! Don't freak out about the sugar content. At least half of it comes from the natural sugar in dates. Below is the recipe:Ingredients: • 2 cups plain Cheerios• 1 cup shelled pumpkin seeds (pepitas)• ½ cup mini, semi-sweet chocolate chips• ½ cup chopped datesMakes 8 (1/2 cup) servings. Nutrition facts per serving: 170 calories, 9.4 grams fat, 2.1 grams saturated fat, 19 grams carbohydrate, 10 grams sugar, 2.6 grams fiber, 5.5 grams protein, 0 mg cholesterol, 41 mg sodium.
