Bulgur salad with peaches and orange yogurt dressingIt’s peach season! Time to enjoy this fragrant fruit of summer. I recently made this salad for the Wellness Community (AKA Cancer Support Center in Blue Ash) and it was a big hit! This salad combines high fiber bulgur with peaches, peppers and cucumbers in a simple yogurt dressing. Bulgur is a traditional staple of Mediterranean cuisine, which has been found to reduce the risk of heart disease and cancer. It is an excellent source of fiber, magnesium and manganese- nutrients that aid in reducing blood pressure. Peaches and peppers provide vitamin C and a decent source of potassium as well as color to this salad. Orange juice, Greek yogurt and ground lemon grass are the perfect combination for a creamy dressing. Quinoa can be substituted to make the salad gluten-free.IngredientsSalad:2 cups dry bulgur (soak for 1 hour before cooking)2 fresh peaches, cut into 1/2" chunks1 red or yellow bell pepper, seeded and chopped1 cucumber- sliced and quartered (keep skin on)¼ cup red onion, diced½ cup chopped fresh cilantroDressing:½ cup plain Greek yogurt (non-fat)½ cup fresh orange juice1 tsp. orange zest3 tsp. white sugar1 tsp. lemon grass pasteDirectionsCook bulgur according to directions and set aside to cool in a large bowl. Clean and cut peaches into chunks and add to cooled bulgur. Chop bell peppers and add to bulgur. Add quartered cucumbers, cilantro and onions to salad and blend.Place Greek yogurt, orange juice, white sugar, lemon grass and orange zest in a bowl and whisk together for dressing. Add dressing to bulgur mixture and blend well. Cool for ~1 hour before serving.Makes 10 (1/2 cup) servings.
