This is the time of year for houseguests, and when you have houseguests they'll need to be fed. Here's an easy brunch dish that's always a big hit and requested year after year. With a few modifications we've managed to keep all the great taste while minimizing the negative impact on your waistline and cholesterol. It can be assembled ahead of time and popped in the oven when everyone is ready to eat. Add chopped peppers and onions to boost nutrient content if desired. Serve with fresh fruit and hot muffins for a meal that will satisfy all your guests.
