Asparagus with Curry Sauce
A delicious creamy dip for cold or hot asparagus, potatoes and other veggies Ingredients:1 bunch fresh asparagus spears, trimmed3/4 cup low fat mayonnaise1/4 cup reduced fat sour cream2 tablespoons curry powderPreparation:Bring a pot of water to a boil. Add asparagus, and cook for about 7 minutes, until bright green. Remove to a bowl of ice water to cool. Drain and set aside.In a medium bowl, stir together the mayonnaise, sour cream and curry powder. Serve with chilled asparagus.
